As the days grow shorter and the air turns crisp, fall emerges as a hidden gem for seafood enthusiasts. This season is prime time for most fish species, such as swordfish, tuna, and halibut. Come autumn, North Atlantic fish are at their healthiest after a summer of feeding in the Gulf of Maine, and it’s when they are most abundant. As seasonal demand wains, they are often available at more reasonable prices compared to the height of summer. So, as you bid farewell to beach picnics and outdoor barbecues, get ready to welcome a season of culinary delights.

In fall, Maine’s local farms and gardens are bursting with fresh vegetables that pair wonderfully with seafood. The rich, earthy flavors of autumn produce complement seafood’s more delicate taste, creating unique flavor blends. Consider pumpkin risotto with pan-seared scallops, butternut squash curry with shrimp, or roasted beet and tuna salad.

These seasonal economic benefits also apply to Maine lobster and crab. Lobstermen’s traps are at their fullest in September and October. Consider crab mac and cheese, lobster grilled cheese, or a shrimp quesadilla for quick, scrumptious lunches. And of course, no discussion of seafood comfort food would be complete without a nod to the quintessential New England Clam Chowder. This hearty soup is the perfect way to warm up on a chilly autumn day.

Besides traditional favorites, fall is the perfect time to experiment with new recipes. Try grilling swordfish steaks with a maple glaze or baking tuna with a savory herb crust or a dusting of autumn spices, nutmeg, cinnamon, or cardamom. Honestly, maple is our favorite glaze on all fish, a natural sweetener with a little more complexity than brown sugar.  We especially love it on our small batch smoked salmon, bluefish, and mackerel. The season’s cool weather encourages heartier dishes, and seafood is no exception. Exploring these flavors can lead to delightful culinary discoveries.
